Georg Gaffky (1850 - 1918) war ein deutscher Arzt und Bakteriologe. Er war Schüler Robert Kochs und hatte als sein Mitarbeiter großen Anteil an dessen Entdeckungen. 1884 gelangen ihm die Züchtung des Typhuserregers in Reinkultur sowie der Nachweis von Salmonellen.
