    DEEP DARK CHOCOLATE CAKE

    2 cups sugar
    1 ¾ cup plain flour
    ¾ cup cocoa [I use asda brand cocoa-it says on the carton can use for baking or hot chocolate]
    1 ½ teaspoon baking powder
    1 ½ teaspoon baking soda [bicarbonate soda]
    1 teaspoon salt
    2 medium eggs
    1 cup milk
    ½ cup vegetable oil
    2 teaspoons vanilla extract
    1 cup boiling water

    Heat oven to 350 F [about 170 C] – fan assisted ovens may be a bit lower than 170]
    Grease & flour two 9” round baking pans.

    In a large bowl, stir together sugar, flour, cocoa, baking powder, baking soda and salt.

    Add eggs, milk, oil and vanilla extract. Beat on medium speed with an electric mixer for about 2 min. Stir in bowling water – the batter will be very thin and watery – it’s ok

    Pour batter evenly into prepared bans and bake 30-35 min or until inserted knife comes out clean.

    Cool for about 10 min in pans then remove from pans and let cool completely. The cake is very moist and tasty!

    If you like, you can put your own frosting on the cake once it’s cooled. I do have a butter cream frosting recipe if ever you need it.

    BUTTERMILK POUND CAKE

    Ingredients needed:

    3 cups plain flour
    ½ teaspoon baking power
    ½ teaspoon baking soda or bicarbonate soda as it’s known
    ½ teaspoon salt
    1 cup soft butter or soft margarine [I take it out the refrigerator and let soften]
    2 cups superfine sugar [1 cup of granulated sugar and 1 cup of icing sugar]
    2 medium eggs
    1 teaspoon vanilla flavouring [NOT vanilla extract]
    1 teaspoon lemon extract [I don’t use this but you can if you like]
    1 cup of buttermilk [I didn’t have buttermilk so I used ¾ cup regular milk]

    Directions:

    Heat oven 350 F [about 170 C].

    Grease [use lard] and lightly flour 2 [9”x5”] loaf pans; this will prevent the cake from sticking to the pans once you take it out of the oven. Set aside.

    In one bowl – combine flour, baking powder, baking soda & salt and put aside bowl.

    In another bowl – beat together the following: butter and sugar until light and fluffy; add eggs and beat well together. Blend in vanilla & lemon extra. Now, add the flour mix and milk and beat well. This mix will be creamy looking.

    Pour batter evenly into loaf pans [you may need to use a large wood spoon or whatever you have that will help the batter smooth out evenly into the loaf pans].

    Bake for about 35-40 minutes or until inserted utensil [I use a knife] comes out clean. The top of the loaf will come out a nice brown colour.

    Cool loaves in pans out of the oven for about 10 min. then remove from pans to cool completely.

    [I also use a regular round cake pan and it comes out just as good as in the loaf pans]

    I also use a hand held electric mixer which is by far easier than using your own hands and a big spoon. The outcome is better with the mixer.

    I realized that if I use an american recipe, I must use the UK conversion because - I found out by accident... so in my recipes, it's actually for UK measurements...
