DEEP DARK CHOCOLATE CAKE
2 cups sugar
1 ¾ cup plain flour
¾ cup cocoa [I use asda brand cocoa-it says on the carton can use for baking or hot chocolate]
1 ½ teaspoon baking powder
1 ½ teaspoon baking soda [bicarbonate soda]
1 teaspoon salt
2 medium eggs
1 cup milk
½ cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
Heat oven to 350 F [about 170 C] – fan assisted ovens may be a bit lower than 170]
Grease & flour two 9” round baking pans.
In a large bowl, stir together sugar, flour, cocoa, baking powder, baking soda and salt.
Add eggs, milk, oil and vanilla extract. Beat on medium speed with an electric mixer for about 2 min. Stir in bowling water – the batter will be very thin and watery – it’s ok
Pour batter evenly into prepared bans and bake 30-35 min or until inserted knife comes out clean.
Cool for about 10 min in pans then remove from pans and let cool completely. The cake is very moist and tasty!
If you like, you can put your own frosting on the cake once it’s cooled. I do have a butter cream frosting recipe if ever you need it.
