Default I know from reading the forums several of you have used the "away on vacation" option

What I am wondering is if you put your shops on Holiday will the items continue to run until their time is up then be in the unsold or do they just continue to be in the shops until you uncheck the holiday setting?

YES, the items will still run their course but buyers/bidders won't be able to bid or buy

You cannot put your shops on holiday / vacation. You can only do this to your listings on holiday / vacation via a notice and check box.
You can put your shop/s on or off line which will not effect your listings status

Okay, I am planning to have hip replacement surgery on Monday and will probably not be able to much on here for a couple of months so what is the best way to handle this?

I don't plan to be down that long but my "stuff" is on a different level and the steps may be a problem for awhile.

If you think / know that you will not be able to give customers the usual standards that you set, then I would simply put the auctions on vacation with a short note / notice saying you are off due to reason x y or z
If a store or more than 1 of your stores becomes empty of listings they might go "off-line" but you can get them back "on-line" in just 2 or 3 clicks by going to the effected stores. You should do this before re-listing the unsold items

You could export all your listings and then close (or even delete) them. Then when you are ready to go again just upload the exported file back to eBid to start them all again.

That will save you having to worry about which ones have closed and which ones have auto-reposted.
