Seller's Description
Original ice cream vintage ad for SWIFT COMPANY. Gelox promotes high proportion of bound water to protect ice cream texture from heat shock. Whenever the temperature of ice cream goes up and down, creating heat shock, a portion of its water content thaws and then refreezes. Each time this happens, the ice crystals and air cells tend to increase in size and impart a coarse texture to the ice cream. Water content falls in three categories, frozen ice crystals, unfrozen or free water, and water bound by milk protein and stabilizer. Arrange for a trail quantity of Geloz.
