    I can't wait to see the finished book - I'm eagerly waiting for a copy for myself and I'm sure everyone else it too.

    I think its amazing what you've organised and pulled everyone together to get this large project off the ground. A big well done is due.

    Swedish style potato salad

    Peel and boil potatoes until soft, using unsalted water.
    Drain, then "rinse" in well-salted boiling water.
    Leave to cool.
    Chop to bite-sized pieces.
    Combine with good mayonnaise and finely chopped pickled gherkin.

    All quantities to personal taste!
