Nip over after Xmas and we can share the cake...not many in my lot like it either... I usually end up turning at least half of it into Chocolate Rum truffles by January 1st
For them as don't know this...If you have any left-over fruit cake this is a simple way to make expensive looking cakes
....
1) Remove any icing and marzipan.
2) Crumble up the cake into crumbs and stir in a dessert spoon of Cocoa
3) Add enough rum to bind the crumbs and roll into balls. ( Don't forget to have a swig of rum at this stage to give the neccessary impetus to the ball rolling technique)
3) Warm some apricot Jam and roll the balls around in it. (You may need another swig of rum to get the desired movement)
4) Roll the balls in a dish full of chocolate strands....( This is a sticky process...you may need another swig of rum if you find sticky work difficult )
5) Place in pretty frilled paper cake cases.
Always useful to give for New Year Birthday present or to Aunt Maud when she comes round...it will stick nicely to her dentures and there should be enough alcohol in to keep her tranquilised for the duration of her visit
PS You can use any alcohol for this recipe...Rum is traditional and obviously to hand...but swigs of voddy, sherry, port or even advocaat will have the desired effect.....
PPS Does anyone here actually drink advocaat???
