Thanks for all the suggestions - funny you should say about sourcing hard to find food V&T - it's our 'Phase 2' plan as well, once we move to the States, to supply US food to the Uk (sort of reverse to what we do now lol). Great minds eh?
I got a pumpkin for Halloween, and was disappointed at the lack of flesh inside - was planing on doing pumpkin soup.Then as soon as it rolled over to November threre wasn't a single pumpkin to be found!! So will have to badger family in Florida to swap a bunch of Oxo cubes for canned pumpkin

Still, am going to attempt my first ever pecan pie for Thursday. Cornbread is proving difficult to find, and I'm sorry, but the thing with the root veggies and the marshmellows? No. No way. My dentist would cry.

OK peeps--Got 2 sweet potato soufle recipes. Here's the old timey easy one.
5 sweet potatoes peeled and sliced ( could use canned, drained and smashed to equal about 3 cups)
If you use fresh, put in large pot and cover with water. Bring to a boil and cook till tender about 15 minutes. Drain and mash. ADD:
1/4 cup butter
1/2 cup packed brown sugar
3 T orange juice
pinch of cinnamon(to taste)
dash of nutmeg if wanted
raisins (optional) - 1/4-1/2 cup
Pecans--about 1/2 cup--more if you like em!
Spread in 9 x 13 casserole . Top with 1 package miniature marshmallows. Bake at 350 for about 25 - 30 minutes or until heated and marshmallows are puffed and golden brown.
Yummmm!
The second one is very similar to JerseyDevil's
3 C mashed sweet potatoes
1 C sugar
3 Eggs
½ c cream
Pecans(optional)
Raisins(optional)
1/2 stick butter
1 t vanilla
½ t salt
Topping:
1 C brown sugar
½ stick butter
½ C self rising flour
1 C chopped pecans
350* for 30 – 40 minutes
I actually like the first one the best. It was the one I grew up on.

Me again--We also often have Mincemeat Pie. Anyone familiar with that? It's not very popular (Name?) but my brother and I absolutely love it. Of course it goes without saying that we always have at least one Pecan Pie. Used to make a strange pie called Vinegar Pie. Got the recipe for that one!

I am the only one in the family that likes mincemeat pie.
Which is great as I get the whole pie, but I am not real big on desserts so by the time I finish a pie the last couple of slices are looking like elf shoes with the pointy ends starting to curl up.

I take it the mincemeat pie is sweet and not savoury? Sounds like a version of UK mince pies eaten at christmas
