    Stuffed Chicken

    This one uses just half a HEA

    Ingredients:
    1 chicken fillet
    1 clove garlic finely sliced
    21g grated half fat cheese (half a HEA)
    3 slices of bacon, fat removed

    Directions:
    Preheat oven to 200°c.

    Make a small hole in the side of the chicken fillet and from there make a pocket inside the chicken breast, as large as possible, but being careful not to puncture the sides of the chicken.

    Mix the grated cheese and garlic then stuff it into the chicken fillet.

    Lay the bacon on a worktop with the edges overlapping.

    Place the chicken fillet on top and wrap it in the bacon.
    Bake for approx 40 minutes.

    No, it's not based on GI - but you can sort of GI it, which I try and do, by using good carbs on green days.

    Have a tray full of lentil wedges to take to work today, much to the girls' pleasure (I have to make double as they pinch them from me!)
