    Default Kaz's slimming recipes (not just for dieters!)

    As quite a few people have told me to keep my diet recipes coming, I thought I'd start an individual thread. I posted the "Cauliflower Cheese Soup" thread with that recipe on it and also the recipe below, which I have copied here also.

    Green Day Quiche (3 syns on Green Day on Slimming World Diet for the whole lot, so if sharing with another, only 1.5 syns)

    Cook up a pack of Macaroni Cheese Pasta'n'Sauce (leaving out the butter if you are dieting).

    Using fry light, fry a finely chopped onion.

    Whizz up 3 eggs and a pot of natural low fat cottage cheese in a blender.

    Mix the egg mixture, onions and pasta in sauce together, transfer to a baking dish and bake until browned.

    Yummy with a salad.

    Red Day Cheesy Burgers (Free on Red Day if using cheese as HE)

    Fry a finely chopped onion in fry light until cooked and browned.

    Mix into a pack of very lean minced beef.

    Divide into four and split each section, inserting a Laughing Cow Light cheese triangle into the middle.

    Seal so cheese is inside and meat completely covers it.

    Bake until cooked.

    Curry Sauce (free on both Red and Green):

    1 Onion
    2 cloves Garlic
    1 tsp finely grated ginger
    1tbsp hot or med curry powder
    400g tin chopped tomatoes
    57ml/2fl oz veg stock
    2 tbspn sweetner
    57g/ 2oz natural yoghurt or Quark/fromage frais
    1tbspn chopped mint
    1 tbspn chopped coriander

    Chop onions and crush garlic. Spray frying pan with fry light and place on heat - add onion, garlic, and ginger and fry for 1-2 mins before adding curry powder.

    Stir and cook for another couple of mins then add tomatoes, sweetner and stock.

    Bring to boil and reduce heat to simmer gently for 12-15 mins.

    Then whizz sauce in food processor or with hand blender, and return to heat. Heat gently then add quark/yoghurt/fromage frais and herbs.

    Strawberry Cheesecake

    500g quark
    1 strawberry mullerlight yogurt
    4 weetabix (2 healthy extra b)
    2 level tbsp honey
    sweetner to taste
    strawberries to decorate
    1 sugar free strawberry jelly

    Melt honey,crumble in weetabix.
    Press into dish and put in fridge to set.
    Mix yogurt with quark and sweetner.
    Make jelly up to quarter of a pint leave to cool,then mix with quark and yogurt .
    Put the mix on top of the base and put in fridge to set.
    Decorate with strawberries.

    If you had half of the cheesecake as a he b choice it would only be 2.5 syns for half!!

    Posh Bubble & Squeak (2.5 syns per serving)

    Serves 2

    200g boiled potatoes
    100g greens (kale, cabbage, brocolli...)
    214g goats cheese (1 x Healthy B per serving)
    1 tbspn flour (3.5 syns total)
    bit of flour to turn in before frying - about 1/2 tbspn

    Lightly cook greens and roughly chop (discard any tough stalks). Add to cooked potatoes and lightly mash/mix. cut goats cheese into small pieces and stir into mixture. add flour.
    Divide mixture into 4 and shapes into burger type shapes. turn lightly on floured plate
    Cook in hot frying pan with a bit of frylight 3-4 minutes each side.
    Serve with a large green salad.

    Cauliflower Cheese Soup (1.5 syns per serving if using cheese as HEa)

    Serves 2

    Dry fry a finely chopped onion until just browned, adding a pinch of paprika (I left that out).

    Add to that one and a quarter pints of chicken stock and a whole cauliflower cut into small florets. Simmer for 15 minutes covered.

    After 15 minutes of simmering, add 300ml milk and simmer for another 5 minutes.

    After the 5 minutes of simmering, add 12 Laughing Cow light cheese triangles and stir until melted.

    Add to liquidiser and liquidise until smooth.

    Serve with a tiny sprinkle of paprika (optional).

    Super lovely, filling and good for you!

    Butterscotch and Grape Cheesecake

    Serves 4

    6 Syns on both Green and Red

    Ingredients

    2 plain digestive biscuits
    85g/3 oz seedless grapes
    1 packet Bird’s No Added Sugar Butterscotch Angel Delight
    284ml/ 1/2 pt skimmed milk
    198g/7 oz very low fat natural cottage cheese or quark skimmed milk soft cheese



    Method

    Crush the digestives and press into the base of 4 individual serving glasses. Cut the grapes in half and place them on top of the crushed biscuits.


    Make the Angel Delight with the skimmed milk as directed on the packet. Sieve the cottage cheese or quark and then blend into the Angel Delight. Spoon the mixture over the biscuit base and chill in the refrigerator until set.

    Macaroni Cheese Stuffed Peppers

    Serves 4

    Green: 1 Syn
    Red: 8½ Syns


    Ingredients

    4 large red peppers
    salt and freshly ground black pepper
    170g/6oz dry macaroni
    1 garlic clove
    4 spring onions
    170g/6oz
    quark skimmed milk soft cheese
    4 tbsp very low-fat natural fromage frais
    1 tsp mild chilli powder
    2 level tbsp freshly grated Parmesan cheese
    2 tbsp freshly chopped chives



    Method

    Preheat the grill to a medium/hot setting. Halve and de-seed the peppers, leaving the stalks intact. Arrange side by side in the grill pan and cook for 7-8 minutes on each side until tender and lightly charred.


    Meanwhile, bring a saucepan of lightly salted water to the boil and cook the macaroni as directed on the packet - appproximately 10-12 minutes. Drain well and return to the saucepan.


    Peel and crush the garlic. Trim and finely chop the white and green parts of the spring onions. Mix both into the quark and fromage frais. Add the chilli powder and season well.


    When the macaroni is drained, toss the quark mixture into the pasta and mix well. Pile into each pepper and press down lightly to fill them properly.


    Return the peppers to the grill pan and sprinkle with the Parmesan cheese. Place under the grill for a further 3-4 minutes until golden and hot. Serve sprinkled with chopped chives.

    Lemony pork and Parma ham medallions


    Serves 1

    Red: Free
    Green 13½


    Ingredients

    170g / 6oz lean pork fillet
    113g / 4oz Quark soft cheese
    grated zest and juice of ½ lemon
    2 teaspoons finely chopped sage
    salt and freshly round black pepper
    28g / 1oz thinly sliced Parma ham, fat removed
    Fry Light, for spraying
    lemon zest strands, to garnish



    Method

    Remove any fat from the pork and, with a sharp kinife, cut through it (but not all the way through)at regular 1 cm/½in intervals along its length.


    Mix together the Quark, lemon zest and juice and sage in a bowl. Season lightly with salt and pepper, then place a little of this mixture in each of the incisions in the pork.


    Wrap the slices of Parma ham around the pork to totally enclose it. Place in a roasting pan that has been sprayed with Fry Light.


    Cook in a preheated oven at 200C/400F/Gas Mark 6 for 25-30 minutes until golden brown and the pork is cooked right through. Serve cut into slices and garnished with lemon zest.

    Hungarian Goulash

    Serves: 4
    Syns per serving:Free on Original, 10 Syns on Green*
    *add 6 Syns if not using beef as a Healthy Extra

    397g/14oz can chopped tomatoes
    2 onions, finely chopped
    227g/8oz mushrooms, sliced
    2 green peppers, deseeded & diced
    908g/2lb lean braising steak
    2 level tbsp paprika pepper
    ¼ level tsp caraway seeds
    1 bay leaf
    pinch of marjoram
    pinch of thyme
    seasoning
    283g/10oz very low fat natural fromage frais


    1. Pre-heat the oven to 150C/300F/Gas 2. Place the tomatoes and onions in a pan and cook until the onions are soft.
    2. Add the mushrooms and peppers and cook for a further 5 minutes.
    3. Cut the steak into 2" strips and place in a casserole dish. Add the paprika, caraway seeds, bay leaf, marjoram, thyme and tomato mixture and season well. Cover and cook for 1½ - 1¾ hours.
    4. Beat the fromage frais until smooth then pour over the casserole just before serving.
    5. Serve with steamed winter vegetables or new potatoes (chosen as a Healthy Extra on Original) for a filling winter warmer.
