I keep seeing on the forums people talking about YDC, I would like to know what does that mean please?

This is an old quote from Wikipedia. The YDC is now run by Vonz and the announcement thread has now moved from the kitchen table to the charity forum.
The history of YDC
The YDC charity auctions were started back in 2003 by YorkiesAuctions (he also started the monthly charity auctions on ebay uk several years before too). The original name of the monthly charity auctions was Yorkies Daft Competition the reason being that forum members competed against each other to raise the largest amount for charity each month and Yorkie came up with the idea and ran the competition. When Yorkie had to stop running the YDC in late 2006 due to family and work commitments the name of the auctions were changed to Your Donation Counts. The YDC is currently run by Shezz.
The YDC is open to all Ebid members and is a fun way to raise money for charity. YDC announcements can be found on eBID's Kitchen Table forum, and forum members are always happy to help new members wishing to take part in YDC. Each month the winner of YDC gets to nominate the following YDC's featured charity. Members may support the featured charity or support a charity of their own choice.

As stated above, YDC charity auctions run every month from the 24th to the 28th, you can support the chosen charity or the charity of your choice. IMHO, it's a good opportunity for newbies (and oldsters) to get themselves and their items noticed, as well as a great way to support charity.
Next YDC is May 24th-28th, so start planning now. Have 6 items ready for next time around, to be listed shortly...
Best wishes for many sales to all,
So It has to be six items for the Charity of our choosing, does the Charity have to be international or can it be on of your local charity organisations?
Also which items are acceptable for this Charity please?

no limit to how many items you list. The charity can be local or international. I like to split my listings between the nominated one (last month was Save The Children) and St. Raphael's Hospice, which is local to me. If you want to take part in the competition part there are some rules explained here in post 1. Apart from helping the charity and being fun, it gets you feedback which in turn can help future sales. But that is a very minor point.
Missed the last question. The answer is: anything you like and if you look here you'll get some ideas
Just noticed you are in Australia. It may be worth thinking about items that don't cost an arm and a leg to post
