Over the weekend, i had one of those - ''I want cake, and I want it NOW'' moments.
(am sure that a lot of us have had those now and again).
Quick search around the net for something easy, and came across the following recipe.
Absolutely yummy - so much so that I got another one in the oven right now!
Tastes similar to Jamaican Ginger cake - but with an oaty texture.
Highly recommended!
Sticky Ginger Treacle Cake
200ml milk
3tbsp Black Treacle..........on todays one am using 2 tbsp treacle, and one of golden syrup.
75g plain flour
150g Light Muscovado Sugar...........I used regular white sugar
50g Dark Muscovado Sugar........I used regular dark brown sugar.
125g Porridge Oats
4 tsp ground ginger
1/4 tsp cinnamon
1 tsp bicarbonate of soda
for some reason the ingredients above done include the butter mentioned below, so I just added a large spoonful.
Preheat the oven to 150 oc, gas 2
In a small pan gently bring the treacle, milk and butter to the boil, stirring until melted.
Sieve the flour into a large bowl and mix in the sugars, oats, ginger, cinnamon and Bicarb.
Give the warm ingredients a quick stir and then mix them into the dry ingredients.
Pour mixture into a lightly buttered 20cm shallow sided square tin.
Bake for 45 mins then leave to cool -cut when cool into 16 squares
They may be a little crumbly - but that's what makes them good! Use non-stick baking paper to separate layers of the cake to avoid them sticking.
