I found the defaults. They seem to be for defaults for use in all auctions. i am looking to set up a group of defaults for use with the various item I sell.
How do I set up different defaults?

You can create multiple defaults, just add a new set. I have a dozen or more for different types of stuff. The link to add a new default is near the top. Holler if you can't find it.
