It is mindless to appear if no bids were made.. makes information look awful and bad for the seller.

I can see a reason with listings with sales, but it makes others untidy and creates needless work in removing it later. It could also affect sales, if a potential buyer sees 'Last updated by the seller' and the date is a year ago it might be off-putting, and can easily happen if you upload lots of listings, as I have recently done.

I'd like this gone too. I remove each one as I edit a listing further but most just get stuck there.

I have often thought about adding something via the bulk edit, but declined.
I really dislike seeing "added by seller" with - horror of horrors - the date.
It serves no purpose, I mean - who else would/could add a notice?
It does serve a very important purpose. When information is added to a listing description after bids have been received, of after any sales on a multi-item listings, then it needs to be recorded what has been added after those bid/buy events. A listing description forms a part of the 'contract of sale'. The ability of a seller to invisibly change that contract after a bid/sale would lead to all sorts of problems (e.g. 18K gold rings subsequently changed to 9K gold rings). So any bids/sales prior to the additions would be governed by the description without the additions. Bids/sales after the additions would be governed including the additions.
The point being raised here, and on several occasions (including by myself) before, is that if there are no bids/sales on a listing then the 'Added By...' line does not need to be included as no sale contracts exist, and the seller is free to change the details of the item they are offering for sale.
It is an idiosyncrasy of the Bulk Edit system that the line is added to any listing edited, rather than just those with bids/sales.
