    Hi
You don't cut back at all as damage can be done and you will weaken the plant.
Plant now from seedtrays to either greenhouse or under protection outside.
You can take covers off later in the spring/summer when weather definately warms up.
Do not crop any this year at all as weakens plant. Next year put them into permanant position if not already done so and only take a few stems, 3/4 twist stems off from plant don't cut otherwise you will do permanent damage and they need time to get established.
After that you should get at least 10 years of abundant crops

Good advice. It is an extremely hardy plant once it gets going. When I bought my house I also got a huge rhubarb plant smack in the middle of the lawn. Took many tries to kill that thing; I hate rhubarb! (how? dish detergent and salt finally did it in -- it was scary, I would cut it down in the morning and that night it was a few inches higher!!!Yikes!!!)
