It's probably just me, but I cant bring up my different defaults for each store - seems to be stuck on just one!

Edit: - just tried listing and the default options are working OK.

I wish I had done now, but I still think Monday morning is a typical time for a seller to be packing

I pack most mornings, but I'm struggling to find a reason to have to log on to any of my selling venues before I can do it.
If you have printed off all the relevant details needed when the item has been paid, why do you need to access the site
