it is quite a simple recipe, but is a bit time consuming zesting and juicing the limes. If you are in a rush, you can buy lime juice in a jar, it keeps in the fridge for yonks, and just bung that in and no zest - it's just as yummy. Also, if you use a chilled bowl to do the whisking in, it will set in around an hour, and be ready to eat sooner.

oh, and I forgot to say, if you line the tin with cling film before greasing, it's easier to ease the pieces out.
This can also be made with gluten free digestives (which are about £2 a box!) for a ceoliac diet, and you can flavour it with almost anything - one of my hubbys favourites is chunks of fudge, topped with honeycomb, which is so simple to make too.
