My international shipping from the US is US$5.00. The invoice I sent out stated shipping as US$5.00. PayPal shows shipping as US$6.00 and that is what the buyer paid. How does it get changed? What am I missing here?

Log into your PayPal account.
Select My Account > Profile
Select Postage Calculations
Ensure that the box Click here to allow transaction-based postage values to override.... is ticked and click on Save.
That setting is the usual cause of errant shipping charges via PayPal.
