    I use 1/2 Doves Farm Self-Rising white flour, and 1/2 Doves Farm white bread flour. I think you could use either by adjusting the baking powder I mention below....omit if you use all self-rising, and double, if you use the non-self-rising. They have a different texture, and I think the combo is good. I also add in buckwheat flour...just replace some of the Doves Farm with equal amount....even a tablespoon or two is nice.....gives a nice color and a tiny bit different taste, and it's gluten free, even tho the name has wheat in it. It's a different, gluten-free grain. yum.

    1 1/4 Cup flour (half and half, or all one)
    3 Tablespoons granulated sugar (or a bit more)
    1 1/2 teaspoons baking powder (if you use half self-rising flour)
    1/2 teaspoon salt (optional)
    1 or 2 beaten eggs
    1 Cup milk
    2 Tablespoons oil.

    Combine liquids, add to dry, stirring till blended, but slightly lumpy. Pour by 1/4 Cup onto hot, oiled griddle. Turn when top bubbles. Makes about 8 pancakes about 4" diameter.

    Not good for diabetics I'm sorry to say.

    Why use granulated sugar HM and not caster sugar?

    You can use caster sugar or granulated.....whichever you have. I just always say granulated because that's what we Americans are used to calling it. Frankly, pancakes, or bread, or fruit, or carrots, or potatos, or many things in excess are probably not the best for diabetics, or anyone. Any kind of starch starts turning to sugar in your mouth when it starts breaking down. I remember science class from 7th grade, and the cracker experiments we did. And some veg and things are almost as bad, if I remember correctly from cooking for my diabetic mom.

    Crepes....heavy on the eggs and milk, and light on the flour would be better, I suspect. But I only rule the castle kitchen, and it's up to everyone else to rule theirs!

    Morning - and no, we didn't have pancakes yesterday as we forgot!

    Thanks for the tea, meebo - I needed that 1st mug. Do not like this cold, damp weather as my joints are protesting loudly - ached all over again yesterday. So began organising some new web pages for my website to take my mind off things.

    eBid Towers are still re-publishing old blog posts as new ones on Facebook - I can't make out what's going on.

    morning all, won't say good as cold & miserable & started raining while dog walking & now my wellys leak so am not happy have even after 2 1/2 hours I still have one cold foot.
    Am afraid somer had some go yesterday wouldn't beleive it I listed them the day before, but he is making up for it & listing at the moment. I will list some more later for him as well but have to go & tidy up the storage area in the kitchen.

    We had pancakes & didn't effect Nigels Blood sugar to much so that was good. hope everyone enjoyed theres

    Well I didn't get my pancakes but will try for them belated tonight, we left it to lat to eat by which time i just grabbed any food that was flying past
